MOCK APPLE PIE 
2 frozen pie crusts or pastry for 2 pie crusts
36 Ritz crackers, coarsely broken
2 c. water
2 c. sugar
2 tsp. cream of tartar
2 tsp. lemon, grated
2 tbsp. butter
1/2 tsp. cinnamon (opt.)

In crust, place broken crackers. In saucepan heat water, sugar and cream of tartar. Bring to a boil; simmer for 15 minutes. Add lemon juice and rind. Cool. Pour mixture over crackers. Dot with butter. Sprinkle with cinnamon if desired. Top with remaining crust. Slit top. Bake for 30 minutes or until crisp and brown at 425 degrees.
