MINACHE MEADOWS CHILE 
5 lbs. stew beef
2 lbs. pork sausage
2 c. water
3 sliced green peppers
3 sliced lg. onions
4 (28 oz.) cans stewed tomatoes
1 (28 oz.) can whole tomatoes
12 oz. beer
4 tbsp. chili powder
3 tbsp. salt
2 tbsp. oregano
2 tbsp. lime juice
1 tbsp. thyme
1 tbsp. garlic salt
1 tbsp. cumin
2 tbsp. pepper
1 tbsp. sugar

Cook stew meat in large covered pot for 2 hours with the water. Cook sausage separately in a skillet; drain fat. In same skillet saute peppers and add to sausage. Saute onions. Place all ingredients including meat, sausage, peppers, onions and spices into the large pot and simmer 3 hours. Serve with tortilla chips. Makes 1 1/2 gallons.
