GOLDEN APPLES 
8 apples (preferably Delicious)
1 orange
1 lemon
2 cups sugar
1 1/2 pints water

Grate the rind of the lemon and the orange and add to the water and sugar. Boil mixture until it spins a thread.

Pare, core and cut apples into quarters; place in hot syrup. Cook over low heat until apples are tender and golden.

Serve with cream that has been whipped with a pinch of cinnamon and a few drops or rum, if used as a dessert, or serve plain as a side dish with pork or chicken.
