TWO CRUST LEMON PIE 
1 1/4 c. sugar
2 tbsp. flour or cornstarch
1/8 tsp. salt
1/4 c. butter
3 eggs
1 lg. lemon
1 tbsp. grated lemon peel
1/2 c. water

Prepare pie crust for 2 crust pie. Combine sugar, cornstarch, and salt. Soften butter and blend into sugar mixture. Add lemon peel to sugar mixture along with water. Pour into unbaked pie shell. Top with crust and seal edges. Bake in 400 degree oven for 30 to 35 minutes.
