TURKEY SOUP 
Carcass of turkey
6 qt. water
3 carrots, sliced
3 stalks celery, sliced
3 med. onions, sliced
6 sprigs parsley
3 bay leaves
9 peppercorns
1 1/2 tsp. salt
1/4 tsp. pepper

You may add some leftover canned tomatoes, 1 or 2 cut up fresh tomatoes, any leftover cooked vegetables (the greater the variety the better), a little rice or macaroni, some curry, dried or fresh herbs, etc.

Combine all ingredients. Cover and simmer for 2 hours. Strain (remove peppercorns and bay leaves). Add more seasonings if desired. Serve as is or cook and freeze. Makes about 18 servings.
