SWEET BLUEBERRY MUFFINS 
1 egg, slightly beaten
1/2 c. milk
1/4 c. melted shortening
1 1/2 c. plain flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. salt

In a small boiler, put a few blueberries (approximately 1/2 to 3/4 cup), fresh or frozen; sprinkle with a small amount of sugar and barely cover with water. Bring to a boil for just a minute or 2. Set aside to cool. Meanwhile, stir together all other ingredients and add in blueberries. Spray muffin tins with Pam cooking spray, or grease lightly, fill. Bake at 400 degrees for 20 to 25 minutes. Makes 12.
