RHUBARB COBBLER 
6 c. rhubarb, cut up
1 1/2 c. sugar
1 tbsp. grated orange rind
1 tbsp. grated lemon rind
1 tsp. vanilla
1/2 c. melted butter
2 c. soft bread crumbs (or cubes)
2 tbsp. flour

Toss all together and bake in buttered casserole dish, covered, at 350 degrees for 25 minutes. Remove cover and continue to bake 10 minutes more or until rhubarb is soft. Serve with vanilla ice cream while still warm. Also good cold.
