SWEET SOUR BEET TOPS 
Select tender green beet tops (small sliced beets are good too). Chop leaves into serving size and boil in salted water until tender.

Depending on the amount of greens you have, make a sweet sour gravy of the following:

Fry some diced bacon (1/2 lb.) with 1 small onion, chopped. When lightly browned, add enough flour to make a smooth paste. Add: 3 to 4 tbsp. sugar Salt and pepper to taste

Cook until gravy is smooth. Add cooked greens and simmer for a short time and serve.
