FAMILY FAVORITE POTATOES 
8-10 med. potatoes
1 lb. bacon
1 lg. onion
1 sm. jar pimento, rinsed and drained
Salt and pepper to taste

NOTE: There was never a recipe, this has been passed down by watching it being prepared. Use your own judgment as for the potatoes, salt, and pepper.

Boil the potatoes with skins on as you would for potato salad. Cool. Meanwhile, dice the bacon in 1/2 inch pieces and in a skillet cook until almost crisp, remove bacon and drain on paper towels, reserve bacon fat. In a large bowl, peel the potatoes and dice into 1/2 inch pieces, dice the onion or chop finely if you prefer, and finely chop the pimento. Mix together, add salt and pepper to taste, and 2-4 tablespoons bacon fat to moisten (more if needed use your own judgment). Mix thoroughly. Spread on an ungreased jelly roll pan and using a spatula, flatten down lightly.

Bake at 375 degrees for 20-25 minutes. I also like to transfer under the broiler for a few minutes to brown the top more but careful so it doesn't dry out. Cut into squares and serve. Good side dish with ham slices.
