PINEAPPLE PORK STIR FRY 
1 1/4 lbs. center cut boneless pork, cut into 2 1/2 inch strips
1 tbsp. plus 1 tsp. vegetable oil
2 tbsp. cornstarch
1/4 tsp. ground ginger
1/8 tsp. ground cloves
2 c. snow peas
1 med. red bell pepper, cut into strips
2 c. drained pineapple in natural juice
2 tbsp. soy sauce

In a 12-inch skillet or wok, over high heat, heat oil until almost smoking. In a plastic bag, combine cornstarch, ginger and cloves; toss pork strips in mixture to coat. Add snow peas and peppers to skillet, stir and cook 1 minute. Add pork, stir and cook until done. Add pineapple chunks, 1/3 cup juice and soy sauce. Cook 1 minute. Serve at once. Makes 4 servings.
