QUICK PEANUT BUTTER FUDGE | |
2 c. sugar 3 tbsp. butter 1 c. evaporated milk 1 c. miniature marshmallows (can substitute marshmallow creme) 1 (12 oz.) jar peanut butter (smooth or crunchy) 1 tsp. vanilla Combine sugar, butter, and milk in electric skillet. Set thermometer at 280 degrees. Bring mixture to a boil. Boil for 5 minutes, stirring constantly. Turn off skillet. Add marshmallows (or creme), peanut butter, and vanilla. Stir until melted and blended. Pour into square (or small rectangular pan for thinner pieces). Fudge sets almost immediately. Allow to cool and cut into desired size pieces. Yield: 2 pounds candy. |
