CARROT PIE 
5 c. cooked blended carrots
1 c. sugar
5 eggs
2 tbsp. flour
1/2 c. butter
1 tsp. nutmeg
1 tbsp. vanilla

Mix all ingredients together and put into unbaked pie shells. Bake at 350 degrees until crust is brown, then turn down oven to 250 degrees and bake until filling is firm. This makes 2 pies. Put Cool Whip on top.
