PORK IN PLUM SAUCE 
5 lbs. pork loin roast, boneless
6 cloves garlic, crushed
1 tsp. caraway seeds
1 carrot, peeled
1 onion, peeled
1 stalk celery
1 c. prune juice
10 whole plums or dried prunes, seedless, quartered
1 pkg. McCormick pork gravy mix
2 c. water
Salt and pepper to taste

Cut carrots, onion, and celery into small pieces and place in the bottom of a roasting pan. Season pork with salt, pepper, caraway seeds, and garlic.

Place pork on top of vegetables and roast in oven at 375 degrees for approximately 2 hours. Remove pork from pan and let cool for slicing. Add water to roasting pan and bring to a boil. Add prune juice and reduce for about 20 minutes. Strain into a saucepan and add prunes or plums. Pour sauce over sliced pork. Serves: 8-10. (Prep and Cooking Time: 2 hours 45 minutes)
