SIMPLE MEAT LOAF 
1 1/2 lb. ground chuck
3/4 c. chopped onion
1/2 c. chopped bell pepper
2/3 c. catsup
2 tsp. mustard
1 egg
1 to 1 1/2 c. crushed crackers

Preheat the oven to 350°F. In a large bowl combine all the above ingredients and mix well. Pat into a 1 1/2 to 2 quart casserole. If desired, spread the top with additional catsup.

Bake for 45 to 50 minutes or until the meat is to your liking. To be sure that the meat loaf is done, I usually cut into it near the middle and take a peek.
