BEEFY JALAPENO CORN BREAD 
You may make this recipe 4 times the amount, except for the Jalapenos, use them to taste.

1 c. cornmeal
2 eggs, beaten
1/2 c. oil
1 c. milk
3/4 tsp. baking soda
1 (17 oz.) can cream corn

Mix this together; pour 1/2 into oiled pan. If making in big batch use pan from electric roaster.

1 lb. ground beef
1 med. onion, chopped
4 or so chopped Jalapeno chilies OR 2 (4 oz.) cans chopped green chili

Cook until meat loses its red color. Pour this over layer of corn bread; top with cheese, then pour rest of corn bread mixture over all. Bake at 350 degrees for 45 minutes or so.
