PEPPER STEAK 
1 1/4 lb. sirloin steak (about 1 in. thick)
1/4 c. vegetable oil
1 c. water
1 med. onion, cut in quarters
1/2 tsp. garlic salt
1/4 tsp. ground ginger
1 lg. bell pepper, chopped
Uncooked instant rice
1 tbsp. corn starch
2 tbsp. soy sauce
2 med. tomatoes

Heat oil in large skillet. Add beef strips, cook turning frequently, until golden brown, about 5 minutes. Stir in water, onion, garlic salt, and ginger. Heat to boiling, reduce heat; cover, and simmer 10 minutes. Add bell pepper during last 5 minutes of simmering. Cook instant rice as directed on package. Blend corn starch and soy sauce; stir into beef mixture. Stir constantly until mixture thickens and boils. Cut tomatoes in quarters, place on beef mixture, and cover. Cook 5 minutes. Serve on rice.
