LIGHT YEAST ROLLS
2 pkg. dry yeast
1/2 c. warm water
3/4 c. milk, scalded
1/4 c. sugar
1 tsp. salt
1/3 c. vegetable oil
2 eggs, beaten
About 4 1/2 c. all purpose flour

Dissolve yeast in warm water; let stand 5 minutes. Combine milk, sugar, and salt in a large bowl; mix well. Cool to 105-115 degrees. Add oil, eggs, 1 cup flour, and yeast mixture, mixing well.

Gradually stir in enough remaining flour to make a soft dough. Turn dough out on a floured surface, knead until smooth and elastic. Place in a well greased bowl, turning to grease top. Cover and let rise in a warm place 50-60 minutes until doubled. Bake at 350 degrees until brown.
