CANNED ZUCCHINI 
4 lb. zucchini
2 onions
1/2 tsp. salt
2 c. white vinegar
1 tsp. celery seed
2 tsp. mustard seed

Cut zucchini and onion into slices. Cover with water and salt and let stand 2 hours. Then drain.

Bring vinegar to a boil, sugar, celery seed and turmeric. Add zucchini and onions.

Bring to a boil minutes. Ladle into hot jars, leaving 1/2-inch headspace. Process in a boiling water bath for 10 minutes.
