TURNIP PUFF 
2 c. cooked & mashed turnips, cooked
1 c. bread crumbs
1/2 c. melted butter
1/2 tsp. sugar
1/2 tsp. salt
1/4 tsp. pepper
2 eggs, separated

Combine turnips, blend crumbs, butter, sugar, salt, pepper and beaten egg yolks. Beat egg whites until stiff; fold into turnip mixture. Spoon into lightly greased 1 quart casserole dish. Bake at 350 degrees for 40 minutes. Makes 4-6 servings.
