BANANA CAKE 
1/2 c. shortening
1 1/3 c. brown sugar
2 eggs, beaten
1 tsp. vanilla
2 c. flour
1/2 tsp. salt
1/2 tsp. baking soda
1/4 c. sour milk
1 c. banana pulp

Cream shortening and sugar. Add eggs and vanilla. Beat until fluffy. Add dry ingredients alternately with milk and banana pulp, beating well after each addition.

Bake in greased 6 x 10-inch pan at 350°F for 50 minutes. Cool and frost with butter icing.

Note: If doubled, still do in 2 pans. Do not do in 9 x 13-inch pan as it dries out until done.
