ROASTED CHESTNUT DRESSING 
2 loaves white bread, dried
2 med. yellow onions, minced
4 stalks celery, chopped
2 lb. roasted chestnuts, chopped
2 sticks butter
Salt & pepper to taste

Saute celery and onions in butter until golden. Meanwhile, cut dried bread into one quarter inch cubes. Add finely chopped chestnuts to bread. Toss in onions, celery and butter. (Stuff turkey with dressing. First rub inside with fresh rosemary.)

Roasted chestnuts - in microwave: Score an X on top of each nut. Place about 10 nuts in a microwave safe dish. Cook on high about 90 seconds to loosen skins.

Since microwave ovens vary in power, you may need to adjust your cooking time.
