QUICK AND EASY CASSEROLE 
2 pkgs. frozen chopped broccoli
1 can mushroom soup
1 sm. onion, finely chopped
1 lg. egg, slightly beaten
1/4 c. butter
1 3/4 c. sharp Cheddar, grated
1 3/4 c. herb-flavored stuffing mix

Cook vegetables according to package directions. Drain well. Reserve 3/4 cup cheese and 3/4 cup bread crumbs for later. Combine vegetables with other ingredients and mix well. Pour into greased casserole dish and top with remaining cheese and bread crumbs. Bake at 350 degrees for 30 minutes. Serves 6 to 8.
