STUFFED WHITEFISH 
1 c. chopped celery
1 c. mushroom slices
1 c. chopped onions
1/2 c. butter
1 1/2 c. crumbled corn bread
1/2 tsp. poultry seasoning
1/4 tsp. salt
Dash of pepper

Saute vegetables in butter. Add corn bread and seasonings, mix well. Brush bottom of fish with oil to prevent sticking. Brush inside of fish with butter and lemon juice. Stuff fish with cornbread mixture, close opening with toothpicks. Place on well greased baking dish. Brush with lemon juice mixture, sprinkle with paprika. Bake at 350 degrees, basting occasionally with lemon juice mixture, for 45 minutes or until fish flakes easily with a fork. Serves 4 to 6.
