DARK HERB COOKIES | |
1/2 c. shortening 1 egg 1/3 c. strong coffee 2 tsp. baking soda 1 tsp. cinnamon 1/4 tsp. salt 2 tsp. coriander seed, crushed 1/2 c. sugar 1/2 c. molasses 2 1/4 c. flour 2 tsp. ground ginger 1/2 tsp. ground cloves 2 tsp. anise seed, crushed Cream shortening and sugar; beat in egg and stir in molasses. Mix dry ingredients omitting anise and coriander. Add to creamed mixture alternately with coffee. Stir in anise and coriander seeds. Drop by teaspoonfuls on greased cookie sheet. Bake at 350 degrees for 8-10 minutes. When cool, these cookies may be frosted with a glaze of 2 cups confectioners sugar blended with 3 tablespoons milk and 1 teaspoon vanilla. |
