PORTUGUESE SWEET BREAD 
5 lb. flour (4 Roses or Robin Hood yellow bag)
2 1/2 lbs. sugar
15 eggs
1 qt. milk
1 lemon, skin
2 sticks butter
1/2 c. oil
1 tsp. salt (level)
1 c. flaky mashed potatoes
1 pocket yeast

In large pot put together milk, the skin of lemon, butter, oil and salt. Bring to a boil. Let cool and remove the skin of lemon. In a small pan make the mashed potatoes, leaving it very hard. Add 2 eggs, 2 tablespoons sugar that you took from original amounts. Aside make yeast (yeast, a drop of warm water and 1 teaspoon sugar). When it rises (about 2 minutes) add it to the mashed potatoes. Let it stand for 1/2 hour to rise.

In a large pan put the flour, make a hole in the middle and put there the rest of the eggs, the mashed potatoes and the milk, still lightly warm. Mix all ingredients in the hole and then work the flour into the egg mixture. Make this dough about 10 p.m. and let it rise until 7 a.m. Cut in loaves, put them in small pans, greased and floured and let them rise again for 4 hours. Bake for 1 hour at 350 degrees. After 10 to 15 minutes cover with aluminum foil.
