SQUIRREL FRICASSEE 
2 squirrels, dressed
1 1/2 tsp. salt
1/2 c. flour
1 tsp. grated onion
1/2 c. shortening
1/2 c. water
1 1/2 c. milk
Pepper to taste

Cut squirrel in 6 pieces. Combine salt, pepper and flour, roll squirrel in mixture. Heat shortening in iron skillet and brown pieces slowly on all sides, about 15 minutes. Add 1/4 cup of water, reduce heat and simmer until tender, about 30 minutes. Add remaining water as needed.
