J. PAUL GETTY MUSEUM CARROT CAKE 
1 1/2 c. corn oil
2 c. sugar
3 eggs
2 c. flour
2 tsp. cinnamon
2 tsp. baking soda
2 tsp. vanilla
1 tsp. salt
2 c. shredded carrots
1 c. chopped walnuts
1/2 c. crushed pineapple

Combine oil, sugar, eggs, flour, cinnamon, soda, vanilla, salt, carrots, walnuts and pineapple in a large bowl. Mix until blended. Pour into a greased 9 x 13 inch pan and bake at 350 degrees 1 hour. Ice with cream cheese icing.

CREAM CHEESE ICING:

3 oz. pkg. cream cheese
1 1/4 c. confectioners sugar
1/2 c. butter
1/8 c. crushed pineapple
1/4 c. chopped walnuts

Mix cream cheese, sugar and butter until fluffy. Add pineapple and walnuts. Mix well.

The flavor of the cake was good but it tasted oily. Also, the frosting just didn't blend well with the pineapple for some reason. Any feedback you may have to make it better?

The best carrot cake ever!! Recipe is easy breezy and I can even make it vegan by using flax seed eggs instead of regular eggs and it turns out just as wonderful!! I received this recipe in the '80s and is the only carrot cake recipe I every use. Simply the best.

I am saved! I have been making this recipe for decades. It was my favorite thing at the J Paul Getty Museum, and my mom found the recipe in the Los Angeles Times. My whole family loves this. I went to make it and my recipe was missing. I'm so glad you have it - it's the best carrot cake ever. Very moist and delicious, and the pineapple in the frosting is yummy!
