RICOTTA POUND CAKE 
3 c. flour, sifted
2 sticks butter
2 c. sugar
1 tsp. fresh orange rind
1/4 tsp. baking soda
1 c. ricotta
6 eggs, separated
1 tsp. vanilla

Sift flour and baking soda onto wax paper. Beat butter with ricotta until creamy. Beat in yolks, one at a time. Add rind and vanilla then flour mixture. Beat whites in bowl until stiff. Fold into cake batter. Grease 2 loaf pans. Bake 1 1/2 hours at 300 degrees. Cool 10 minutes.
