PEAR OATMEAL STREUSEL COFFEECAKE 
1 1/3 c. brown sugar
1 tbsp. cinnamon
1 1/3 c. rolled oats
3 c. flour
1 1/3 c. butter
5 lbs. basic muffin mix
1 1/2 c. granulated sugar
3 c. prune, dried, chopped
1 #10 can pears, sliced; drain, sliced, drain syrup reserved
1 1/4 c. eggs
1 c. oil

2 18 X 26 INCH PANS - 96 SERVINGS
2 2/3 c. brown sugar
2 tbsp. cinnamon
2 2/3 c. rolled oats
1 1/2 qt. flour
2 2/3 c. butter
10 lbs. basic muffin mix
3 c. granulated sugar
1 1/2 qt. prune, dried, chopped
2 #10 can pears, sliced; drain, sliced, drain syrup reserved
2 1/2 c. eggs
2 c. oil

Combine brown sugar, cinnamon, oats, flour and butter for streusel topping. Set aside.

Combine muffin mix, sugar and prunes in bowl. Mix in pear syrup, eggs and oil. Blend until batter is smooth.

Divide batter equally between greased pans. Arrange pears evenly between pans. Sprinkle streusel over pears. Bake at 375 degrees for 40 minutes.
