LIME GELATIN FILLING AND CAKE
TOPPING
 
1 (6 oz.) pkg. lime gelatin
1 1/2 c. boiling water
2 (8 3/4 oz.) cans crushed pineapple
3 egg yolks
3/4 c. confectioners sugar
1 1/2 c. whipping cream, whipped

Dissolve gelatin in boiling water; add pineapple and chill until partly set. Beat egg yolks until thick and lemon-colored. Beat sugar in gradually. Gold in gelatin mixture. Fold whipped cream in gently. Chill until a spreading consistency.

Cut cake into 2 layers. Spread mixture between layers and on sides and top of cake. Chill cake several hours before serving. Makes a beautiful cake in green and white.
