NANA'S SUNDAY CHICKEN | |
One of many delicious recipes handed down to me by my Mother. 2 whole chickens (3 1/2 to 4 lb. each) Salt Pepper Garlic powder 1/3 c. biscuit mix or all-purpose flour 2 lg. onions 1 stick butter 6 chicken bouillon cubes 1 c. water Clean chickens and pat dry. Salt and pepper entire chickens. Add generous amount of garlic powder. Place in roasting pan and pat with half the flour. Slice onions very thin and put over chickens. Slice stick of butter and place here and there on chickens. Sprinkle remaining flour over chickens and onions. Brown in 400 degree oven at least 1 hour. Dissolve bouillon cubes in 1 cup boiling water. When chickens are golden brown, add bouillon mixture. Cover the chickens and seal the pan with aluminum foil. Turn oven down to 325 degrees and bake another 1 1/2 hours or until very tender. Remove chickens and place on serving platter. Stir juice and onions in pan and serve over rice. Serves 6 generously. NOTE: This is a wonderful recipe for turkey. Baking time will vary depending on the size of the turkey. |
