"AUNT MATTIE'S" COUNTRY COCONUT
PIE
 
1/2 lb. butter
2 c. sugar
5 eggs
1 tbsp. vanilla flavor
1 can evaporated milk
12 oz. pkg. shredded coconut

CRUST:

2 c. all-purpose flour
1 1/2 tsp. salt
2/3 c. vegetable shortening
1 tsp. vanilla flavor
1 tbsp. butter
1 tsp. sugar
5 to 6 tbsp. cold water

CRUST: Mix and roll out crust. Bake at 325 degrees for approximately 35 minutes.

In a large mixing bowl, whip butter fluffy, then add sugar and let this mixture blend until nice and fluffy. Add the vanilla. After well mixed, add milk and beat 5-6 minutes longer. Add coconut and stir by hand. When testing pie for readiness, give pie a little push. If it is still liquid, wait 5 minutes and repeat.
