CARROT CAKE | |
1 c. sugar 1/2 c. vegetable oil 1 1/2 c. sifted flour 2 tsp. baking powder 1/2 tsp. baking soda 1/4 tsp. salt 1 tsp. cinnamon 1 c. grated carrots 2 eggs 1/2 c. chopped nuts Heat oven to 350 degrees. Mix sugar and oil. Add sifted dry ingredients and carrots. Add eggs, one at a time, beating well after each addition. Add nuts and blend well. Turn into greased 8 1/2 x 4 1/2 x 2 1/2 inch loaf pan. Bake 55-60 minutes. Cover cake with aluminum foil for first 20 minutes baking time to reduce cracking. Yield: 1 loaf. |
