JOYCE'S PERSIMMON PUDDING 
2 c. persimmon pulp, regular ole persimmons
2 c. sugar
2 eggs
2 c. milk
Butter, size of an egg
2 1/2 c. flour, all purpose
1 tsp. baking soda
1/8 tsp. salt
1 tsp. baking powder
1/2 tsp. vanilla; optional

Mix pulp and sugar; add eggs and beat well. Mix soda in milk. Sift flour, salt, and baking powder. Add milk and flour alternately to pulp. Mix well. Pour butter that has been slightly melted in 9 x 13 inch glass casserole dish to batter and mix well. Pour pudding in dish and bake at 350 degrees for 1 hour and 15 minutes, approximately.
