FIESTA FISH AND SHELLS 
12 oz. fish
1 c. sm. shell macaroni
1 (16 oz.) can tomatoes, cut up
1/2 c. chopped onion
1/2 of a 1 1/4 oz. pkg. (2 1/2 tbsp.) taco seasoning mix
1 med. green pepper, cut into strips
1/4 c. shredded Cheddar cheese

Cook macaroni according to package directions. In medium saucepan stir together undrained tomatoes, onion and taco seasoning mix. Add macaroni and green pepper strips; bring mixture just to boiling.

Pour tomato-macaroni mixture into 10 x 6 x 2 inch baking dish. Fold each fish piece as necessary to fit in pan; place over mixture. Spoon some of sauce over fish. Bake covered in a 350 degree oven 35 minutes or until fish flakes easily when tested with a fork. Uncover, sprinkle cheese over fish. Bake 5 minutes more until cheese melts. Makes 4 servings. Per serving: 261 calories, 29 g protein, 20 g carbohydrates, 7 g fat, 77 mg cholesterol, 765 mg sodium.
