BANANA MUFFINS | |
2 c. bananas, mashed (very ripe) 3/4 c. skim milk 1/2 c. apple concentrate 2 1/2 c. w. wheat flour (unbleached if desired white flour) 1 tsp. baking soda 1 tbsp. cinnamon 1/4 tsp. cardamom 3 egg whites, beaten to soft peaks Non-stick pans 1. Combine bananas and liquids. 2. Sift dry ingredients into mixing bowl. 3. Add liquids and stir. 4. Fold in beaten egg whites. 5. Spoon into non-stick pans (about 2/3 full). 6. Bake at 375 degrees for 30-35 minutes. Let sit 10 minutes before removing from pans. |
