APPLE FRITTERS WITH MELBA SAUCE 
1 c. flour
1/4 tsp. salt
3/4 c. milk
2 eggs, separated
1 tbsp. melted butter
Sliced apple rings
Confectioners' sugar

SAUCE:

1 c. canned raspberries (or other berries)
1/2 c. currant jam
1/4 c. sugar
2 tsp. cornstarch
1 tbsp. cold water
2 tsp. lemon juice

1. Sift flour and salt. Gradually add the milk with the beaten egg yolks and melted butter. Fold in the stiffly beaten egg whites.

2. Dip the apple rounds in the batter and fry in deep hot fat until brown. Drain.

3. To make the sauce, put berries, jam and sugar in a saucepan and bring to a boil. Blend cornstarch with water and lemon juice. Cook, stirring constantly until clear. Strain through a sieve. Serves 6.
