ZUCCHINI CASSEROLE IMPERIAL 
4 c. sliced zucchini
2 c. boiling water
2 eggs
1 c. mayonnaise
1 onion, chopped
1/4 c. green pepper, chopped
1 c. grated Parmesan cheese
1 tsp. butter
2 tsp. buttered bread crumbs
Salt & pepper to taste

Cook zucchini in water until tender; drain. In large bowl bean eggs. Stir in next 4 items, salt and pepper at this point. Add zucchini. Turn into greased 1 1/2 quart baking dish. Dot with butter. Sprinkle with bread crumbs. Bake at 350 degrees for 30 minutes or until bubbly.
