WILD DUCK WITH MUSHROOMS 
1 duck
1 onion, sliced
butter
Salt and pepper
2 c. water
1 bay leaf
Sherry to taste
1 c. fresh mushrooms, sliced
2 tbsp. flour
1/8 tsp. powdered thyme

Prepare and quarter duck. Brown duck with onion in 1/2 cup butter. Add salt and pepper, water, bay leaf, and Sherry. Cover and simmer for 1 1/2 hours. Saute mushrooms in 2 tablespoons butter; add flour and thyme. Add this mixture to the duck and continue to cook for 30 minutes.
