AMBROSIA COOKIES 
1 c. butter
1 c. granulated sugar
1 c. brown sugar
2 eggs
2 c. plain flour
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1 c. raisins
1 c. coconut
1 c. broken pecans
1 c. chopped dates
1 1/2 c. oatmeal
1 tbsp. grated orange rind
1 tbsp. grated lemon rind
1 tsp. vanilla extract

Cream butter and add sugar gradually until well mixed and fluffy. Add eggs and mix.

Sift flour, baking powder, salt and soda together; gradually mix into butter mixture. Add orange, lemon rinds and vanilla; mix well. Add raisins, coconut, nuts, oatmeal and dates. The prechopped sugared dates are all right.

Using 2 small spoons, making scoops of batter and place on lightly greased cookie sheets. Bake 10-12 minutes at 375 degrees. Experiment with batches to get time and size desired. At 12 minutes they will be light and still look undone. These will be soft and chewy.

Note: They are better if made a week ahead, and put into an airtight container.
