IRISH WHISKEY CARROTS 
2 tbsp. unsalted butter
3/4 lb. carrots, cut into matchsticks
1/2 c. Irish whiskey
2 tsp. sugar

Saute carrots and sugar in butter. Add salt to taste. Add whiskey; boil and simmer 5 minutes covered. Uncover and simmer until liquid is evaporated.
