SCALLOPED BROCCOLI 
3/4 c. evaporated skim milk
3/4 c. onion, chopped
1 (3 oz.) can mushrooms, drained
1 tsp. salt
1/4 tsp. nutmeg
1/8 tsp. pepper
3 eggs, slightly beaten
1 (10 oz.) pkg. frozen broccoli spears, cooked & drained

Combine first 6 ingredients in saucepan, mixing well. Simmer 1 minute. Stir a small amount of hot mixture into eggs. Stir eggs into hot mixture. Arrange broccoli in greased baking dish. Spoon sauce over broccoli. Bake at 350 degrees for 30 minutes or until knife inserted in center comes out clean. Yields 6 servings.
