AL'S GRAND EMPANADAS 
DOUGH:

1 can refrigerator biscuits (I use Pillsbury Grands! Golden Layers)

FILLING:

1/2 lb. chopped chicken (or your choice)
12 oz vegetables: tomato, green chilies, celery, onion (chopped)
salt and pepper, to taste
any other desired spices

Preheat oven to 375°F.

For filling, fry chopped up chicken with vegetable mix in olive oil.

Separate dough into 10 biscuits; divide each in half horizontally, forming 20 rounds. Press or roll each round into 4-inch circle.

Place 1 tablespoon meat mixture in center of each circle, fold dough over filling to form half circle and seal edges with fork and prick top; brush with beaten egg; place on ungreased cookie sheet.

Bake at 375°F for 9 to 14 minutes or until golden brown.

Makes 20 Grand Empanadas.
