APPLE FRITTERS 
1 1/3 c. sifted enriched flour
1 tbsp. sugar
2 tsp. baking powder
1/2 tsp. salt
2 eggs, beaten
2/3 c. milk
1 tbsp. salad oil
3 to 4 med. apples, pared and cored
Confectioners' sugar

Sift together flour, sugar, baking powder and salt. Blend eggs, milk and salad oil; gradually stir into dry ingredients. Mix until smooth. Cut apples into strips; stir into batter. Drop by tablespoonfuls into deep hot fat. Fry until golden, about 4 minutes. Drain. Sprinkle with sugar while warm. Yield: 3 dozen.

PERSONAL NOTE: It was a toss up between Apple Fritters and Cherry Soda when our grandson came to visit us.
