MOM'S POTATO SOUFFLE 
4 tbsp. chopped onion
2 tbsp. flour
3 c. leftover mashed potatoes
3 tbsp. melted butter
1 c. milk
2 eggs, separated
Salt & pepper

Brown onion in butter; add flour and then milk. Add with yolks to potatoes and mix well. Fold in beaten egg whites. Bake in greased 6 x 6 inch dish, about 25 to 30 minutes at 350 degrees.
