APPLE LEMON CHEESE PIE 
1 c. sugar
1/2 tsp salt
1/2 tsp. grated lemon rind
4 eggs, beaten
3 tbsp. lemon juice
1/4 c. butter
1 c. applesauce, unsweetened
1 9 inch pie crust

Combine sugar, salt, and lemon rind. Set aside. Combine eggs, lemon juice, butter, and applesauce. Add dry ingredients and beat with electric beater until mixture is blended. Pour into pie crust. Bake at 450 degrees for 15 minutes. Reduce heat to 350 degrees for 15 minutes longer.
