MUFFINS 
1 c. whole wheat flour
3/4 c. bran (wheat)
1/4 c. wheat gum
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. each nutmeg, cloves or sometimes ginger
1/4 c. canola oil
1/2 c. honey or brown sugar
1 egg
1 c. non fat buttermilk

Mix all liquids; fold in dry ingredients.

Add one of the following:

1 chopped apple & 1/2 cup raisins

1/2 cup chopped pineapple

2 cups carrots, grated & 1/2 c. raisins

Substitute cornmeal for wheat bran and add 1 cup blueberries or one or two ripe bananas. Sprinkle walnuts or pecans on top. Bake at 375 degrees for 18 minutes. Yield: 12 muffins. Low fat, low calories.
