SWEET POTATO SALAD 
5 c. water
1 1/2 lb. sweet potato
2 med. stalks celery thinly sliced
1 sm. onion thinly sliced
1 med. orange peeled and sectioned
1/2 c. mayonnaise or salad dressing
2 tbsp. orange or pineapple juice
1/2 tsp. dry mustard
1/2 tsp. grated orange peel
1/4 tsp. salt
1/4 tsp. ginger
1/8 tsp. pepper
Lettuce leaves

Heat water to boiling, add potatoes. Heat to boiling and reduce heat. Cover and simmer until tender 30 to 35 minutes. Drain potatoes slip off skins. Cut potatoes into 1/2 inch cubes, add celery, onion and orange. Mix remaining ingredients except lettuce leaves. Pour on vegetables and orange. Stir to blend. Refrigerate 2 hours. Serve in lettuce lined bowl.
