BAKED ROUX 
4 c. flour
2 c. cooking oil

Select a thick pot, such as a Dutch oven. Mix the flour and oil together. Place in oven and bake at 375 degrees for 1 1/2 to 2 hours, stirring about every 15 minutes in order that it will brown evenly. Should be a rich brown when done. When cool, store any leftover in refrigerator for future use (it will keep).
