MICROWAVE ROUX 
2/3 cup vegetable oil
2/3 cup flour
2 cups onions, chopped
1 cup celery, chopped
1/2 cup green pepper, chopped
1 tsp. garlic, minced
1/4 cup green onion tops, chopped
1 tsp. celery, minced
Use 4 cup Pyrex measuring cup

Mix oil and flour together in measuring cup. Microwave on high about 6 minutes or until golden brown. Stir, zap 30 seconds more (until brown). Add chopped onions, chopped celery, green peppers, garlic, and zap 3 minutes on high. Add green onion tops and minced celery. Zap 2 minutes on high. Slowly add enough hot water to make 4 cups. You may freeze leftover roux to add to stews, gravies, gumbos, etc.

Since microwave ovens vary in power, you may need to adjust your cooking time.
